If you are looking for a really quick and healthy dish for summer, then how about a Greek salad?
Choose the freshest ingredients you can buy then follow this simple recipe.
Ingredients
250g vine and/or cherry tomatoes
One red onion
2 tablespoons olive oil
Juice of half a lemon
Half a cucumber
50g black Kalamata olives (or green olives if you prefer)
200g Feta cheese
Parsley or mint leaves
Pitta bread, optional
Method
1. Cut the tomatoes and cucumber into small chunks of about 1.5cm
2. Slice the red onion into thin strips
3. Mix chopped tomatoes, cucumber and onion into a bowl
4. Break the feta cheese into small bite-size pieces and mix in gently with other ingredients
5. Chop and add parsley and mint leaves
6. Drizzle with olive oil and lemon juice
7. Season with black pepper
8. Serve with pitta bread
